Expresso Win a Wedding:17 March 2012, Rhebokskloof wine estate

We were thrilled when one of Cape Town’s premiere event coordinators, Wedding Concepts, asked us to take part in the Win a Wedding competition that was featured on Expresso, Channel 133, in the beginning of March. I actually met the couple, Anel and Riaan, for the very first time on the set of Expresso. We did a full on tasting with them on camera, which was most exciting and daunting at the same time. Luckily our cakes dazzled as always and Anel and Riaan chose three different flavours for each tier. The bottom tier would be a dark chocolate ganache cake, followed by our red velvet cake and topped with our ever-popular Tiramisu style cake. Wedding Concepts together with Garth and his team from Lush created a fresh look using white, sharp greens and purple. I have never seen Rhebokskloof so styled, so clean, so fresh and modern. Yes, the dream became reality on Saturday the 17th of March 2012 and we were there… The cake was delivered and set-up at last minute to accommodate the chocolate. Anel gave me artistic license, keeping in mind the contemporary look and feel, and I could interpret her specifications in chocolate. I chose to use dark and white Belgian chocolate and used a different technique on each tier. I experimented with a new technique to create the top of the top tier. By shocking the piped tempered chocolate on a frozen marble slab I could create twisted and turned spaghetti-like strands which we softened with some fresh Lysianthus to tie in with the colours of the wedding.
